Beef Barbacoa Tacos Recipe

INGREDIENTS
For Beef Barbacoa
- 2 pounds beef chuck roast or brisket, cut into chunks
- 1 onion, chopped
- 4 cloves garlic, minced
- 3-4 chipotle peppers in adobo sauce
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1/2 cup beef broth. Salt and pepper, to taste
- Juice of 1 lime
For Tacos
- Small tortillas
- Fresh cilantro, chopped
- Onions, diced
- Radishes, sliced (optional)
- Lime wedges
INSTRUCTIONS
- Place beef, onion, garlic, chipotle peppers, cumin, oregano, cloves, beef broth, salt, and pepper in a slow cooker.
- Cook on low for 6-8 hours (or high for 3-4 hours) until the beef is tender and easily shreds.
- Shred the beef with two forks and mix it with the cooking liquid. Add lime juice for extra flavor.
- Warm the tortillas.
- Assemble the tacos with beef barbacoa and your choice of cilantro, onions, radishes, and a squeeze of lime.
- Offer salsa or hot sauce for an extra kick.
