Beef Barbacoa Tacos Recipe

INGREDIENTS

For Beef Barbacoa
  • 2 pounds beef chuck roast or brisket, cut into chunks
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 3-4 chipotle peppers in adobo sauce
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1/2 cup beef broth. Salt and pepper, to taste
  • Juice of 1 lime
For Tacos
  • Small tortillas
  • Fresh cilantro, chopped
  • Onions, diced
  • Radishes, sliced (optional)
  • Lime wedges

INSTRUCTIONS

  1. Place beef, onion, garlic, chipotle peppers, cumin, oregano, cloves, beef broth, salt, and pepper in a slow cooker.
  2. Cook on low for 6-8 hours (or high for 3-4 hours) until the beef is tender and easily shreds.
  3. Shred the beef with two forks and mix it with the cooking liquid. Add lime juice for extra flavor.
  4. Warm the tortillas.
  5. Assemble the tacos with beef barbacoa and your choice of cilantro, onions, radishes, and a squeeze of lime.
  6. Offer salsa or hot sauce for an extra kick.
