Chicken Adobo Tacos Recipe

INGREDIENTS

For Chicken Adobo
  • 1.5 to 2 pounds boneless, skinless chicken thighs
  • 1/2 cup soy sauce
  • 1/2 cup vinegar
  • 4-5 cloves garlic, minced
  • 1 onion, thinly sliced. Salt and pepper to taste
For Tacos
  • Tortillas
  • Shredded lettuce
  • Diced tomatoes
  • Sliced avocado
  • Sour cream Grated cheese

INSTRUCTIONS

  1. Preheat Oven. Combine the soy sauce, vinegar, minced garlic, and sliced onion in a bowl. Add the chicken thighs to the mixture. Marinate for at least 30 minutes in the refrigerator.
  2. Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned on all sides (about 5-7 minutes).
  3. Pour the marinade over the chicken and add a little water if needed to cover the chicken partially. Simmer for 30-40 minutes until the chicken is tender and flavorful. Season with salt and pepper.
  4. Shred the cooked chicken and return it to the skillet. Simmer for another 10-15 minutes to allow the flavors to meld.
  5. Warm the tortillas.
  6. Assemble tacos with the chicken adobo, lettuce, tomatoes, avocado, sour cream, and cheese.
  7. Serve and enjoy your Chicken Adobo Tacos!
