Chicken Adobo Tacos Recipe

INGREDIENTS
For Chicken Adobo
- 1.5 to 2 pounds boneless, skinless chicken thighs
- 1/2 cup soy sauce
- 1/2 cup vinegar
- 4-5 cloves garlic, minced
- 1 onion, thinly sliced. Salt and pepper to taste
For Tacos
- Tortillas
- Shredded lettuce
- Diced tomatoes
- Sliced avocado
- Sour cream Grated cheese
INSTRUCTIONS
- Preheat Oven. Combine the soy sauce, vinegar, minced garlic, and sliced onion in a bowl. Add the chicken thighs to the mixture. Marinate for at least 30 minutes in the refrigerator.
- Heat a large skillet over medium-high heat. Add the marinated chicken and cook until browned on all sides (about 5-7 minutes).
- Pour the marinade over the chicken and add a little water if needed to cover the chicken partially. Simmer for 30-40 minutes until the chicken is tender and flavorful. Season with salt and pepper.
- Shred the cooked chicken and return it to the skillet. Simmer for another 10-15 minutes to allow the flavors to meld.
- Warm the tortillas.
- Assemble tacos with the chicken adobo, lettuce, tomatoes, avocado, sour cream, and cheese.
